Strawberry, Blueberry and White Chocolate Oatmeal Cookies

I first saw this recipe on Live, Love & Sugar quite some time back. I loved how it had berries and white chocolates in it, and I loved how pretty it looked on LLS. It didn’t seem too difficult to make it, so I thought I’d give it a try. But I put baking these off for quite a while, and only tried it when I was staying with my boyfriend in Indiana.

The hardest part of baking these was the final mixing of the dough, the dough was rather tough and slightly wet so it was quite difficult to mix in the soft fruits without smashing them. So I improvised – I spooned the dough onto the baking sheet, and then pressed the fruits into the dough ever so carefully. It turned out pretty well, and because I did that, all the fruits were on top of the cookie and it turned out aesthetically pleasing.

I’d say this is a rather healthy cookie since more than half the dough consisted of healthy stuff. It didn’t taste healthy, which is good because cookies aren’t suppose to taste healthy. It actually tasted like something you could buy off the shelves in stores, you wouldn’t believe how proud I was of myself.

I told boyfriend that I was baking, but I refused to tell him what it was just in case the entire baking session flopped and the cookies turned out to be eeky. But it was a success!

My cookies were a little large and much thicker than LLS’s, so it had to bake longer than advised. I was really happy with the results though, boyfriend loved it and couldn’t stop snacking on them. Then again, who can resist strawberries, blueberries and white chocolates?


Here’s the recipe:

3/4 cup butter

3/4 cup light brown sugar

1/4 cup sugar

1 egg

2 tsp vanilla extract

2 tsp cinnamon

1 3/4 cup flour

2 tsp cornstarch

1 tsp baking soda

2 1/2 cups Old Fashioned Oats

1/2 cup white chocolate chips

1/2 cup cut strawberries

1/2 cup blueberries


1. Preheat oven to 350 degrees.
2. Cream butter and sugars together until light and fluffy, about 3-4 minutes.
3. Mix in egg and vanilla extract.
4. Add cinnamon, flour, cornstarch and baking soda to a medium sized bowl and combine.
5. With the mixer on low speed, add flour mixture to butter and sugar mixture.
6. Stir in old fashioned oats and white chocolate chips. Dough will be thick.
7. Carefully add strawberries and blueberries.
8. Make dough into balls of about 2 tbsp, roughly the size of a ping pong ball. Flatten them out a bit and place on cookie sheet covered with parchment paper.
9. Bake for 10-11 minutes. They should be slightly golden on the edges and look a little underdone in the center.
10. Remove from oven and allow to cool for a couple minutes before putting on a cooling rack.
